The hot and humid climate of Kerala is ideal for Nutmeg cultivation. World wide, it grows in Indonesia’s Moluccas Island, which is also know as the Spice Island. The tree is called “Jayphal” in Hindi & “Jathi” in Malayalam and the fruit is called “Jathikka” in Kerala. The fleshy fruit is yellow in colour and as it matures, it bursts open exposing the bright red mace that covers the hard black seed.
Usage: Nutmeg is the seed and the inner cover that is dried is the Mace, another popular spice. It has more intense flavour and is used for flavouring bakery products such as cookies and cakes.
