Indian Five Spices or Panch Phoron in Hindi, is a whole spice blend used mainly in East India, Bangladesh and Southern Nepal. The consumption pattern for these blend of five spices is more towards Eastern part of india. Panch Phoron consists of Fenugreek seeds(Methi dana),Cumin Seed(Jeera), Black Mustard Seed(Rai) and Fennel Seed (Saunf). All these spices are put in equal parts. Some blend with lesser of the Fenugreek seeds to avoid bitter taste. One of the spices is substitutes with celery seeds (Ajwain) depending on the region and taste.
Features : According to Ayurveda, including all this six tastes sweet, sour, salty, bitter, pungent and astringent in each main meal contributes to mind and body balance.
Use : Panch Phoron is used whole and never grounded. Traditionally it is used in vegetables, chicken or meat curry, fish, lentils, shukto(Bengali Cuisine) and in pickles. It is also fried in mustard oil or ghee which immediately pops! This technique is called “tempering” in English or “Chokhna” in Hindi. After tempering other ingredients are added to the fried spices to be coated in the mixture. Five spices is used for flavouring many of indian recipes like Tomato chutney, Potato Curry, Spinach and Lentil.
