This should not be confused with Cassia Cinnamon or Vietnamese or Chinese Cinnamon, which looks exactly like Ceylon Cinnamon, but the inner portion is hollow for a Chinese Cinnamon stick. Moreover the taste of Cassia Cinnamon will be more spicy and sweet compared to Ceylon Cinnamon which will be less sweet. The coumarin content in Ceylon Cinnamon is the lowest and is considered the best spice to have in your kitchen racks!
