Is the outer aromatic bark of the Cinnamomum cassia, an evergreen tree. This tree is widely cultivated in South of India, especially Kerala and other eastern Asian countries like Malaysia, Indonesia, Taiwan, Vietnam and China. Cassia sticks are extremely hard compared to Ceylon Cinnamon sticks, which has fine inner layer and resembles a cigar!
Usage:
The Cassia bark is used a flavouring agent for confectionary, desserts and cakes. Cassia is sold as bark or as neat quills or sticks. The cassia powder is made using a coffee or spice grinder. They have a mild flowery cinnamon flavour . Cassia buds are used in pickling recipes, marinades and teas. Cassia powder is used as a natural hair dye, as it colours grey hair to pale blond colour.
